On a fresh herb and onion bread crumb stuffing with a rosemary and garlic jus

Wrapped in bacon on a nest of colcannon with a pea puree and a red wine reduction


Grilled Fillet of Hake
Set on a bed of sauté greens with a lemon hollandaise sauce


Roast Sirloin of Beef
Oven roasted and masked with a black pepper, thyme and red wine jus    


Spinach and ricotta tortellini with a wild mushroom and garlic cream sauce
